Yes, these are vegan, but I think that around here it's not noticeable anymore. There are even recipes that I will make after lent is over.I was using what I remembered in my head of recipes that I had made before and then another recipe, however, it wasn't like anything I had ever made. So, I guess this is the birth of a new recipe.
The best part is that everyone liked them!!!
2 cups flour (your choice what kind you use)
1 tsp baking powder
1/2 tsp. cinnamon
1 tsp baking powder
1/2 cup light brown sugar (not tightly packed)
3/4 tsp salt
1/4 cup oil
1 1/4 cup unsweetened applesauce
1 apple pealed and diced--I'd add more next time.
Vegan chocolate chips-sprinkled in there. Less than 1/4 cup.
Bake 350 F for about 16-20 min.
This recipe is around 170 calories per muffin and it makes 12 full muffins and they are moist. But, watch as they stick to the paper.

Chocolate Cupcakes - Vegan Style
Sorry for the bad photo, but it was quick and I wasn't going to set up a whole shoot for it--maybe next time. Think those look Vegan? I didn't think you would. So, here is the deal, some Oreo's are vegan--not healthy--but vegan. To my credit, I said this was a vegan cupcake not a healthy cupcake. Although, if you leave off the frosting and the Oreos, it could be a healthy cupcake. The regular without the Oreos and frosting are yummy and so soft!
Now, as far as the recipe is concerned, I got it from here. You see when vegan baking is concerned, I head on over to Chocolate Covered Katie. Her recipes have not failed me yet. :) I tweaked this one a bit, as I used a different soy yogurt and my nondairy milk was vanilla almond milk. I also only used 1 tbsp of corn starch--I wasn't sure why it was in there. But, instead of leaving it all out, I just reduced it.
Then, I decided to add Oreos to the batter and make some homemade frosting to top it off. Little Man and my darling husband gave these thumbs up. I have to laugh because these days I am asked: " Are they vegan or regular?" Honestly, sometimes you really can't tell....

Apple Pie Pancakes and A Task! :)
This recipe was over at CCK. However, I adapted it a bit.
Apple Pie Pancakes
Apple Pie Pancakes
- 1/3 cup flour (You choose what kind you use)
- 1/4 c rolled oats
- 2 finely-chopped apples
- 2 tsp cinnamon
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1 tsp pure vanilla extract
- 1 T sugar or 1 packet stevia ( I used Sugar to make mine)
- 1/3 cup skim milk (or more, for thinner pancakes)
- 1 T oil (not necessary, but if you don't like Fat Free tasting pancakes, this is a must to add.) Thinking you could add applesauce to this as well.
Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once.
Top with syrup or frozen yogurt. I can't tell you how they taste as I have not had one yet. But, Little Man gobbled them up. He liked that Frozen Yogurt was the topping. :)

Thursday Tastes like Cottage Pudding Sauce...
Yum Cottage Pudding Sauce....well, actually it's a bit too sweet for me usually. However, if you are in the mood for something sweet. This fits the bill. The boys at my house can gobble this up no problem. It's a Grammy treat--something that Little Man always asks his Grammy to make when we visit.
I tried making it myself recently and was actually successful!!! Like I always say, if I can make it you certainly can. :) By the way, this is to be served over warm yellow cake or cupcakes.
Here is how you make that yummy goodness...
Cottage Pudding Sauce
1 cup white granulated sugar
2 eggs
1/4lb margarine or 1 stick (I used butter--when it has this much sugar does it really matter?)
1 tsp vanilla
Oh and I doubled the recipe for lots of warm, yummy goodness.
Combine margarine, sugar, egg yokes and vanilla in bowl and beat. Set aside.
In second bowl, beat egg whites stiff. They look cool don't they?
Fold the egg whites into the first mixture. Should be looking something like this...
Then, you set the bowl into a pan of boiling water to melt. You must stir constantly, until melted. It looks something like this now...
Then you poor the warm, sweet, yummy goodness over the warm yellow cake and forget the word calorie exists! Enjoy!
