I find it funny that anyone would want one of my recipes. Funny that I'd even share cooking advice. But, this is a favorite in my house. It's never quite the same. But, has a similar feel each time. I no longer measure items and just plunk them in. This is the only recipe I can think of that I do that to.
Spicy Chicken Pasta
Chicken Breast (About 1-2lbs depending on how many you are feeding)
2-3 peppers (Usually try to have 2 different colors)
1 cup chopped carrots (sometimes I leave this out)
2 cans diced tomatoes (I don't add this much anymore)
1/4-1/2 cup onion (tend not to add this anymore as my husband is not an onion fan and liked it better without them)
1tbsp oil to cook the meat and veggies in
1tbsp oregano (only if I am adding the tomatoes) which I have not been lately. Lazy I guess. ;)
1/2 tbsp garlic powder
1/2 tsp salt
1tsp sugar (only if I add the tomatoes--helps to take the bite out of them) Look at me looking like I know what I am talking about...I read that somewhere sometime. I am really clueless. :)
1tsp pepper
1tsp red pepper
1tsp season salt (then I don't add the regular salt)
1 box noodles of your choice.
You can add more pepper, red pepper, garlic, etc to your taste. I tend to add more veggies sometimes and always add more pepper and red pepper.
Mix the spices together. Spray the pan (very large pan-may I suggest a wok) and cook the chicken and spices. Then add the veggies. Meanwhile have your pasta cooking. Once the chicken and veggies are where you want them to be, add the pasta. Mix together. Stir add more spices to your taste. Sprinkle with ground parm. cheese. This makes a ton of food.
Other veggies I have added:
Yellow squash
Hot peppers
(Olives even work!)
